Ingredients

45minutes total
3-4 servings
  1. 4medium sliced yam, diced
  2. 3stem root sweet potato, chopped
  3. 1/2 cupchicken stock
  4. 1-2big cups of water
  5. 4big red tomatoes
  6. 4-5red bell peppers(atarodo)
  7. 1\2 teaspoon of mixed spice
  8. 2 cubesseasoning(preferably chicken cubes)
  9. 2cooking spoon of cooking oil
  10. 1 teaspooncurry
  11. 1medium size onions, chopped
  12. 1/2 teaspoongrounded dry red pepper
  13. to tasteSalt

Steps

45minutes total
  1. 1

    Put diced yam and chopped sweet potatoes in a pot, add chicken stock and a cup of water(the water should top the yam and potato a little).

  2. 2

    Add grounded dry red pepper, mixed spice, chopped onions, curry, 1/2 teaspoon of salt to it, cover the pot and cook on medium heat.

  3. 3

    Grate tomatoes and red bell peppers together.

  4. 4

    Put 2 cooking spoon of vegetable oil in a fry pan to heat up, pour tomatoes and pepper into heated oil and stir. Add a pinch of salt and stir fry for 10minutes.

  5. 5

    After 20-25 minutes check if yam and sweet potatoes is tender, add the fried tomato pepper sauce, 2 chicken cubes of seasoning and stir with a wooden spoon(or wooden omorogun/turner).

  6. 6

    Leave to thicken for 4-5 minutes, taste for salt. Off your cooker and allow to cool before serving.

  7. 7

    Serve with fried chicken.
