make the dipping sauce.pour the soy sauce into a bowl. add a generous squeeze of lime juice. taste and add more lime jyice if needed

for omelette

mix the eggs.soy sauce ,chillies and coriander. add sugar and season to taste.heat oil in a large frying pan, pour inthe egg mixture and swirl the pan to make omelette.

cook for 1-2 minute, until the omelette is just firm and the underside golden.slide it out onto a plate and roll up as if it where a pancake. leave to cool completely.

when omelette is cool ,slice diagonally in 1/2 in pieces. arrange on serving platter and serve with dipping sauce
