in a large frying pan or wok heat the olive oil gently

add the chillies, garlic and mushrooms to the oil and lower heat

fill a saucepan with water and add a dash of salt and olive oil to cook the tagliatelle

add the bacon or ham to the frying pan

put the finely chopped parsley into the frying pan along with the oregano

add the sherry and stir on a low heat

once the bacon starts to look cooked add the creme fraiche and stir it thoroughly into the mix

keep on low heat until tagliatelle is ready

mix in taglatelle until coated with creamy mixture and ingredients are mixed throughout, then serve with a garnish of parsley
