Cook carrots in lightly salted water until tender.

Drain, mash and set aside.

Whisk melted butter, eggs, carrots and sugar.

Blend until smooth.

Add the remaining ingredients and mix well.

Pour into a 2-quart greased baking dish, leaving room for expansion.

Bake at 350° for 45 minutes.

When slightly cooled dust with confectioners sugar.
