Attach whisk attachment to your stand mixer. Add 1/2 cup water to the mixer bowl then sprinkle in geletin. Let set about 15 minutes, or as long as it takes to cook the other part.

Stir sugar and 1/2 cup water together in medium saucepan over med- hi heat. Stir until sugar is dissolved then allow to boil without stirring until it reaches 275°F on a candy thermometer.

When thermometer reaches 270, turn mixer on low. When sugar reaches 275°F turn off heat and begin drizzling it into the gelatin mixture. This process needs to take a long time and may slow down your machine. If you dump it all in very quick you'll have 1/3 the marshmallows you would if you drizzle it slowly. It just won't whip up the way it should however long you let it go... Speaking from experience here..

When it doubles or triples in size add the vanilla or any other flavour. Doing half vanilla and half something else such as root beer flavoring turns out yummy!

Oh yeah, first direction should have been to grease and corn starch your 13x9x2" pan.
