
Free Fold Mulberry and Apple Pie

Place flour,butter,and sugar in food processor and mix till combined

With motor running, add enough ice water to form a soft dough.

Place dough on a lightly floured surface and roll out into a circle large enough to overhang a 20cm pie tin by about 10 cm.

Place pastry on tin sprayed with nonstick cooking spray. Cut apples into slices then toss with mulberries, cornflour and sugar.

Place mixture in center of pastry shell and fold in the overhanging edge. It will not cover the pie.

Sprinkle the surface with castor sugar and bake in a preheated oven of 200°F for 30-40 minutes until pastry is golden and filling is soft.

Serve cut into wedges with thick cream
