Bakso is the number one street food in Indonesia. On every corner of the country you will find it being sold in different ways: in eating-in stalls, on the street stalls, and even door to door using a moving cart.
When I moved to the Netherlands and couldn't find it as easy as in Indonesia, I became obsessed with finding the right technique to create the perfect balance of the structure that Indonesian baksos have. The meat balls have to be chewy but also tender at every bite.
After some experiments and internet research, I found that the secret is pretty simple: chicken should be used in the meat mix.

Ingredients

30 minutes
4 servings
  • 300 gminced beef
  • 200 gchicken breast
  • Garlic powder
  • Ground pepper
  • Ground salt
  • Sweet soy sauce
  • Salty soy sauce
  • 3 spoonstapioca starch
  • 1 literChicken broth soup
  • Chopped tomatoes
  • Egg noodle or white rice noodle
  • Fried tofu
  • leavesChopped coriander

Steps

30 minutes
  1. 1

    Process the minced meat, chicken, and tapioca strach in the food processor until they mix perfectly.

  2. 2

    Season with garlic powder, ground pepper, ground salt, sweet soya sauce, and salty soya sauce. Make balls out of the mixture.

  3. 3

    Bring chicken broth soup to boil. Put in the meat balls and boil them until done. Handy notes: when done, the balls will float on the soup.

  4. 4

    Make the noodle as per instruction on the package. Fry tofu and dice them. Chop tomatoes and coriander leaves.

  5. 5

    Fix the noodles, tofu, tomatoes, and coriander leaves in a bowl. Perfect it with meat balls and soup.

  6. 6

    For more tasty kick, add fried onions and ground fresh chili 👌
