Ingredients

  1. 1 cupfreshly squeezed orange juice (250 ml)
  2. 1 cupolive oil (250 ml)
  3. 1 1/4 cupsgranulated sugar (250 grams)
  4. 3 1/2 tablespoonsbrandy (50 ml)
  5. 1heaping teaspoon ground cinnamon
  6. 1 teaspoonbaking soda
  7. 8 cupsself-rising flour (about 1 kilogram)

Steps

    In a large bowl, combine the orange juice, olive oil, sugar, brandy, cinnamon, and baking soda. Stir very well with a spoon until the mixture is smooth and the sugar starts to dissolve.

    Begin adding the flour. Add half of the flour (about 4 cups) first and knead. The mixture will be like a batter. Then gradually add the remaining flour, a little at a time, as you may not need it all.

    Continue kneading as you add the flour, stopping when you have a soft, pliable dough that doesn't stick to your hands.

    Preheat the oven to 340–355°F (170–180°C) on the convection setting and line a baking sheet with parchment paper.

    Shape the dough into cookies and place them on the prepared baking sheets.

  6. 6

    Place the cookies in the oven and bake for 12–15 minutes. Remove them when done and let them cool on the baking sheet so they firm up.
