Easy, Fluffy Orange and Brandy Cookies

In a large bowl, combine the orange juice, olive oil, sugar, brandy, cinnamon, and baking soda. Stir very well with a spoon until the mixture is smooth and the sugar starts to dissolve.

Begin adding the flour. Add half of the flour (about 4 cups) first and knead. The mixture will be like a batter. Then gradually add the remaining flour, a little at a time, as you may not need it all.

Continue kneading as you add the flour, stopping when you have a soft, pliable dough that doesn't stick to your hands.

Preheat the oven to 340–355°F (170–180°C) on the convection setting and line a baking sheet with parchment paper.

Shape the dough into cookies and place them on the prepared baking sheets.

Place the cookies in the oven and bake for 12–15 minutes. Remove them when done and let them cool on the baking sheet so they firm up.
