Heat oil in a large saucepan and add the beef. Cook until browned.

Add the chopped onion, chunks of carrot and chunks of potato to the pan. Cook for 5 mins.

Add the parsley, salt and pepper. Stir well.

Add the stock, wine, Worcestershire sauce and balsamic vinegar. Cover and simmer for 1 hour.

Remove cover and cook until liquid in the pan has reduced.
