I came up with this idea for a quick lunch, decided to try it out, and it turned out great! The taste is amazing, very filling, and it's a great way to use up leftovers from the fridge. I hope you enjoy it! 😋😋😃

I came up with this idea for a quick lunch, decided to try it out, and it turned out great! The taste is amazing, very filling, and it's a great way to use up leftovers from the fridge. I hope you enjoy it! 😋😋😃

Cut the potatoes into long strips. Brush them with oil, sprinkle with salt and your favorite seasoning—I used curry powder and a bit of vinegar. Bake on the top rack of the oven for about 15 minutes, or until golden brown. (You can find my oven-baked fries recipe on my page.)

For the sauce: Heat the water, and when it starts to boil, add the bouillon cube and all the listed spices. Stir well, then add the tomato sauce and keep stirring until everything is dissolved. After about 5 minutes, the sauce will thicken. Remove from heat.

Once the potatoes are cooked, cut the saj bread in half to make two circles that are easier to roll. Place the potatoes on one edge of each circle, and add any sauce you like—ketchup, mayonnaise, mustard, or any other. I used two sauces shown in the picture.

Roll up the bread and arrange the wraps side by side on a baking sheet. Spoon the sauce over the top and a little between the wraps, as shown in the picture.

Grate mozzarella cheese over the sauce, then bake on the top rack until the cheese melts. Garnish with parsley, arugula, or spinach—whatever you have on hand.

Note: The filling doesn't have to be just potatoes. You can use any kind of grilled or roasted meat or chicken, or even cooked meat or chicken—just take the pieces out of the sauce and use them as filling, and use the cooking sauce as your wrap sauce. This recipe is a great way to use up leftovers that aren't enough for a full meal, turning them into a new, complete dish for your table.
