This dish is loaded with protein and fiber. Can be had with rice or puttu or chapati. Tempering with coconut oil gives a wonderful taste, though any other neutral oil can be used. Adjust spices to suit your taste. I have cooked the moong very well. You can cook it till it is just done.

Ingredients

30 minutes
4 portions
  1. 2 cupsbanana stem
  2. 1 cupmoong
  3. 1 cupgrated coconut
  4. 1 teaspooncumin powder
  5. 1/2 teaspoonturmeric powder
  6. 1.5 tablespoonsred chilli powder
  7. 3-5flakes of garlic
  8. Salt, as required
  9. Water as required
  10. For tempering
  11. 2 tablespoonsoil (coconut oil is best for this dish)
  12. 1 teaspoonmustard seeds
  13. 1 teaspoonurad dal
  14. 2 sprigscurry leaves
  15. 1dried red chilli

Steps

30 minutes
  1. 1

    Wash the moong and soak it in water for an hour or so.

  2. 2

    In the meantime, clean the banana stem and chop into small pieces.

    Add the moong and banana stem in a pressure pan. Add just enough water to cover everything and cook for one whistle.

  4. 4

    Turn off the stove after one whistle and let the pressure release on it's own.

  5. 5

    Pulse the grated coconut, spice powders, salt and garlic using the chutney jar of the mixer.

  6. 6

    Add the coconut spice mixture to the cooked moong and banana stem. Cook till the masala is well cooked and water has evaporated.

  7. 7

    For the tempering, heat oil. Add mustard seeds and urad dal.

  8. 8

    When the mustard seeds start popping, add curry leaves and chopped dry red chilli.

  9. 9

    Pour the tempering on the cooked moong and banana stem and turn off the heat. Mix well.

  10. 10

    Let it stand for a while and then serve.
