Slice plantain sprinkle salt and mixed spice and toss plantain then set aside

Heat up vegetable oil in a frying pan and fry plantain and drain in a paper towel after ward then set aside

Heat up frying pan, add a tablespoon of vegetable oil, break eggs in a small bowl and whisk add onions, pepper, salt and mix spice and fry

Once it’s caked through, remove and serve with fried plantain
