Sweet carrot in sweet orange caramel

As a kid, I used to make coconut candy by simply cutting up coconuts to desired shapes & sizes, & tossing them in simple homemade caramel while on low heat. This usually produced a very sweet dessert which I & my siblings relished. I've taken it a step further now as an adult & made this delicious dessert.

Steps

Cut carrots into desired shapes & sizes.

In a saucepan, add orange juice & sprinkle sugar, place on medium heat & stir till it caramelise i.e. turns a bit brownish & thick.

Add the carrots & keep stirring till it thickens again (carrots contain their own liquid, so would make the caramel a bit watery when added).

Remove from heat when desired thickness is achieved. Serve hot or cold.
