This is such a simple slow cooker dinner using ingredients I pretty much always have around the house. I usually serve it over either rice (pictured with coconut rice) or quinoa, with a veggie on the side.

This is such a simple slow cooker dinner using ingredients I pretty much always have around the house. I usually serve it over either rice (pictured with coconut rice) or quinoa, with a veggie on the side.

Ingredients

4 servings
  1. 1 lb.boneless, skinless chicken breasts
  2. 1/2small yellow onion, diced
  3. 3 clovesgarlic, minced
  4. 1/4 cuplow sodium soy sauce
  5. 1/4 cupketchup
  6. 3 tbsp.honey
  7. 1 tsp.sriracha sauce
  8. 1/2 tsp.ground ginger
  9. 1/2 tsp.dried basil
  10. 2 tsp.cornstarch
  11. 2 tsp.water

Cooking Instructions

    Grease a slow cooker and lay the chicken it in. Sprinkle the onion over the top.

    In a bowl, whisk together the soy sauce, ketchup, garlic, honey, sriracha, ginger and basil. Pour that mixture over the top of the chicken and onions.

    Cook on low heat for 5-6 hours OR on high heat for 3-4 hours.

    Once it's finished, remove the chicken to a cutting board and shred it. Then mix the cornstarch and water together in a small bowl to form a slurry and stir that in to the remaining sauce in the slow cooker.

    Stir the chicken back into the sauce and place the lid back on. Let it cook on high heat for 15 or so more minutes, until the sauce thickens up a bit.

    After that you're ready to serve. Store any leftovers in the fridge.

I love to bake and to try out new recipes! I'm always on the lookout for simple dinners for busy weeknights. A lot of the recipes I post on here are ones I've found on Pinterest or from different bloggers, and that I've tried and really enjoyed, but I always reference to where I got the recipe from in the recipe description and the pictures are my own. If there's no source listed, then it's a rare recipe that I came up with. I have two wonderful kids and I hope to pass on my love of cooking and baking to them.

OK, this is what I call INSPIRATION! I didn't have everything the recipe called for, but there was lots of what I did have. When it was done, I had a new favourite.
