Bangin' Banoffee Pie

natzcoxxy2k
natzcoxxy2k @cook_3679508

This desert is so simple to make yet tastes like it has taken a decade to master! Made in about five easy steps, it can be dressed up for a formal dinner or for dinner with friends, great as a party dish or just something to keep the kids happy! With bananas in you have one of your five a day, low on chocolate and minimal butter so although it tastes 'so good its bad for you', it isn't! Although one too many pieces can get a tad sickly....but overall this is a great wee desert! Enjoy!

Steps

20 mins
  1. 1

Put the digestive into a sealed, hole free bag and crush with a rolling pin until they are fine crumbs.

  2. 2

Put the can of condensed into a pan and cover completely with boiling water, leave for two hours. Do not take off heat before this as it will not thickening up enough.

  3. 3

Melt butter in a pan, when melted, mix in a large bowl with digestive biscuits until it mixes together to form a base upon which you can layer, put into your cake/flan tin and press down firmly until base is formed.

  4. 4

Pour double cream into a bowl and whisk until thick, fluffy and passes the upside down bowl test.

  5. 5

Peel and chop 2 bananas and dice then add to the whipped cream and add some master sugar if you like, mix well.

  6. 6

When the condensed milk is ready, open and pour onto the butter/digestive mix in the cake/flan tin and smooth out until ready for another layer. leave to set in fridge until fully cool. If you do it while the condensed milk is too warm, the cream/banana mix will melt.

  7. 7

When cooled, add the whipped cream/banana mix and smooth out in preparation for bananas to be placed on top.

  8. 8

Peel and chop another 2 bananas and cover top of pie.

  9. 9

Sprinkle the flake over the top, leave for 30 mins to set and enjoy!!!
