  1. 66-in corn tortillas
  2. 12eggs
  3. 1/2 cupmilk
  4. 1 cupcheddar cheese
  5. 1 cupmonterey jack cheese
  6. 1/4 cupchopped red bell pepper
  7. 1 can4-ounce diced green chilies, drained
  8. 1 tbspvegetable oil
  9. 1 1/4 cupsliced fresh mushrooms
  10. 1/2green bell pepper, cut into 1in long strips
  11. 110 ounce can enchilada sauce

    preheat oven to 350°F

  2. 2

    grease a 9x13 inch baking pan.

  3. 3

    layer tortillas in bottom of pan so that edges overlap.

  4. 4

    in a large bowl, beat together eggs and milk. Stir in cheeses, red pepper and green chilies. pour egg mixture over tortillas.

  5. 5

    bake in preheated oven until eggs are set, about 25 to 30 minutes. meanwhile, heat oil in a skillet or frying pan over medium heat. add mushrooms and green pepper; saute until tender. stir in enchilada sauce and heat until warmed through.

  6. 6

    spoon enchilada sauce over baked eggs and serve.
