measure the flour, salt, and yeast into a large bowl

add the water and oil. mix into a dough. add 2-3 tsp more water if needed

knead for 10 minutes on a lightly floured surface. place in a bowl that is rubbed down with1 tsp oil, turning the dough in the oil, and cover. allow to rise to double its size for 1.5 hours.

grab half tablespoon sized pieces, rolling the dough between your hands, and place three rolled dough balls in greased muffin tin, repeating until you run out of dough. (this should fill 18-24 muffin tins)

cover and allow to rise in a warm place for 30 minutes. they shoukd mostly fill the miffin cup. sprinkle your spices mixture over each muffin cup.

bake at 350°F until golden, about 15 minutes. remove immediately and allow to cool on rack.
