clean and de-veined shrimps

slice down the middle of the shrimp be careful not to split it in half.

soak shrimps in soda for 1-2hrs

mince garlic, galangal, and chili

mix fish sauce with some sugar and lime juice and add garlic, chilli, and galangal to taste

drain shrimp and place individually on a plate one layer at a time

mince cilantro and sprinkle on top of shrimps

drizzle fish sauce mixture on top

serve 5-10 minutes later when shrimp meat turns opaque white
