Steps

Take beef out of fridge 30 mins before going in the oven.

Preheat oven to 240 C

Roughly chop onions, carrots and pile into a roasting tin with garlic and herbs then drizzle with olive oil.

Place beef on top of veg, drizzle with olive oil and season with salt and pepper.

Cove beef and veg loosely with foil, place in the oven and immediately turn down heat to 200 C.
- 6
Check timing instructions on beef and baste halfway through . If veg looks dry and a splash of water.

When beef is cooked allow to rest for 15mins before serving.
