Put vermicelli noodles in heat proof bowl. Cover with boiling water for 10 minutes. Drain

Heat oil, over mid to high heat. Add chicken chunks and cook. Add laksa paste. Cook until fragrant maybe 30 seconds. Stir in stock. Bring to boil, add coconut milk, add choy sum, simmer 2 minutes. Stir in fresh herbs.

Divide noodles into four. Top with bean sprouts. Pour laksa over top. Add chilli, fresh herbs and lime. Serve.
