Ingredients

  1. 8 3/4 oz(a wedge) of Manchego cheese
  2. 2 ozManchego cheese spread
  3. 1 3/4 ozheavy cream (35% fat)
  4. 4 1/4 ozshelled nuts (almonds and walnuts)

Cooking Instructions

    Line a rectangular mold with plastic wrap and set aside.

    If you don't have a nougat mold or something similar, it's very easy to improvise one. Simply cut along an empty milk or juice carton. Keep the part without the cap. Wash and dry it very well. Line the mold with plastic wrap. Done! This time I used a mushroom tray. The nougat comes out a bit thicker, but it's an ideal size.

    Remove the rind from the cheese and cut it into pieces or grate it and put it in a medium saucepan.
    Add the heavy cream and heat over low heat, stirring constantly with a spoon, until it melts. Do not let it boil, as it could burn and give us a flavor we don't want.
    Once melted, remove from heat and add the cheese spread. Beat with a hand whisk or your electric mixer until you have a smooth and uniform mixture.

    Add the nuts. Mix again until they are well distributed throughout the mixture. Fill the mold.

    Smooth the surface and tap it a few times to even it out in the mold.

    Cover with plastic wrap and refrigerate for at least 2 hours.
