It is always nice to have something tasty to serve when friends come over for coffee. This cake freezes beautifully and can be served with frosting, butter, or just fingers.

It is always nice to have something tasty to serve when friends come over for coffee. This cake freezes beautifully and can be served with frosting, butter, or just fingers.
Steps

Beat eggs and sugar together with a mixer for 5 to 7 minutes at medium speed

Add butter and vanilla, beat a further 2 minutes

Add milk, salt, flour and cranberries and mix with a spoon
- 4
Pour batter into a floured 9x13 or 10 spring-form pan, top with Demerara sugar
- 5
Bake at 350 for 60 minutes (until cake tests clean)

To freeze, let cool completely then wrap in parchment paper then aluminum foil.

Let thaw at room temperature then serve with butter, or frost with buttercream or fluffy white frosting.
