Ingredients

10 servings
  1. 1 bagpotatoes o'brien (frozen cubed potatoes w/onions & peppers
  2. 1 cupsour cream
  3. 1 cancream of mushroom soup
  4. 2 cupsshredded cheddar (divided)
  5. 5 Tcubed cold butter (small cubes)
  6. Salt
  7. Pepper

Cooking Instructions

  1. 1

    Set out frozen potatoes for about an hour before cooking to start thawing. (Or microwave for a few minutes)

    Heat oven to 350

  3. 3

    Mix sour cream and soup in a bowl.

  4. 4

    Fold in butter and 1 1/2 cups cheese.

  5. 5

    Add potatoes and mix until covered.

  6. 6

    Salt and pepper to taste. Stir again.

  7. 7

    Dump mixture into sprayed 9x13 casserole

  8. 8

    Add remaining cheese on top.

  9. 9

    Bake for one hour or until bubbly on edges and cheese on top starts to brown.

    If you're adding a crunchy topping, I wouldn't add it until the last 20 minutes to avoid over browning.

Honestly, I put my recipes here so that I can easily look them up myself (although some are made often enough that I no longer need the recipe - like the pork chops, my son's favorite). That being said, these are the tried and true dishes I make on a regular basis for my family. But, of course, I'm glad to share...enjoy.
