Ingredients

26 hours
  1. 1/2 cupraisins
  2. 1/2 cupchopped cashews
  3. 1/4 cupchopped citrus peels
  4. 8-9chopped apricots
  5. 1/2 cupchopped dates
  6. 1/4 cuptutti fruity
  7. 9-10glazed cherries (sliced)
  8. 1 cuprum or orange juice or apple juice
  9. 1.5 cupsall purpose flour or maida
  10. 3/4 cupwhole wheat flour
  11. 1.5 cupsbrown sugar or normal sugar
  12. 1 cupoil or melted butter
  13. 1 cupsoy milk/dairy milk
  14. 2 tbspapple cider vinegar or regular vinegar
  15. 1 tspbaking soda
  16. 1/2 tspbaking powder
  17. 1 tspvanilla extract
  18. 1.5 inchescinnamon
  19. 2cloves
  20. 2cardamoms
  21. 2all spice
  22. 2 pinchesgrated nutmeg

Steps

    First of all, chop all the dry fruits and take out in a jar or a bowl.

  2. 2

    Pour rum or orange juice or apple juice and mix well.

  3. 3

    Cover and let the dry fruits soak for 12 to 24 hours. If you are using rum, keep outside. If you are using juice, keep in fridge.

  4. 4

    In between, stir and shake so that the dry fruits are soaked properly.

  5. 5

    In a grinder, grind all the spices and keep aside.

  6. 6

    Take a loaf pan or a cake mould and grease it well.

  7. 7

    Preheat the oven at 180 degrees for 20 mins.

    Sift together both the flours, spice mix and baking powder. Keep aside.

  9. 9

    Add oil and sugar and mix well.

  10. 10

    Take milk in a bowl. Add vinegar and mix. Add the baking soda. Stir and add the frothing mixture to the cake batter.

  11. 11

    Add vanilla essence and mix quickly.

  12. 12

    Pour in the cake pan and tap it.

  13. 13

    Place some extra sliced cherries on top.

  14. 14

    Bake in a preheated oven at 180 degrees for 1 hour 45 minutes (more or less) depending on your oven.

    Check by inserting a toothpick. If it comes out clean, your cake is done.

    Wrap in a cling film or store in a container.
