Preheat oven to 350°. Lightly spray 4 one cup remekins with nonstick cooking spray

Combine the hash-brown potatoes, cream, 1 1/4 cups cheddar cheese, onions, salt and pepper in a large bowl. Mix well

Spoon the potato mixture into the prepared ramekins. Sprinkle with remaining cheese.

Bake until bubbly and golden brown and the potatoes are cooked, 35-45 minutes.

EXTRA: Sprinkle 2 cups crushed cornflakes on top of potato mixture and drizzle with 1/4 cup melted butter just before baking

EXTRA: Can bake potatoes in 11x7 baking dish. Increase cooking time by 12 minutes
