Ingredients

  1. 1 lbscallops
  2. Salt and pepper
  3. 1 tbspoil
  4. 1 tbspbutter

Cooking Instructions

    Set sous vide to 123 F

  2. 2

    Season scallops with salt and pepper; place in ziplock bag with oil (make sure scallops are in one layer).

  3. 3

    Cook for 30 minutes

  4. 4

    Remove scallops and pat very dry

  5. 5

    Melt butter in skillet; when it stops foaming, add scallops and sear until golden brown on both sides (about 20-30 seconds per side).
