Preheat oven to 350°F.

In large bowl, combine first 5 ingredients ; set aside.

In medium bowl, combine eggs, pumpkin, oil. Add liquid ingredients to dry ingredients; stir just until moistened.

stir in apples.

Spoon batter into greased or paperlined cups, fill 3/4 full.

Sprinkle strusel topping over batter.

Strusel topping: In small bowl, combine 2 tbls all-purpose flour, 1/4 cup sugar, 1/2 tsp ground cinnamon. Cut in 4 tsp butter, until mixture is crumbly.

Variation: For 6 giant muffins, increase baking time to 40 to 45 minutes.

Bake at 35 to 40 minutes
