Ingredients

  1. 1/4 cupolive oil
  2. 1 cupchopped onion
  3. 2 clovegarlic, finely chopped
  4. 1 can28 oz Progresso crushed tomatoes
  5. 2 tspsugar
  6. 1/2 tspsalt
  7. 1/4 tsppepper
  8. 4boneless skinless chicken breast halves
  9. 1/3 cupProgresso ITALLIAN STYLE BREAD CUMBS
  10. 1/3 cupGRATED PARMESAN CHEESE
  11. 1EGG, BEATEN
  12. 1/2 cupSHREDDED MOZZERELLA CHEESE

Cooking Instructions

    IN A 3 QUART SAUCEPAN, HEAT 2 T OIL OVER MEDIUM HEAT. COOK ONION AND GARLIC IN OIL FOR 2 MINUTES, STIRRING OCCASIONALLY. STIR IN TOMATOES, SALT, SUGAR AND PEPPER. HEA TO BOILING, STIRRING OCCASIONALLY. REDUCE HEAT, COVER AND SIMMER.

    BETWEEN SHEETS OF WAXED PAPER, flatten chicken to 1/4 inch thickness. In shallow dish, mix bread crumvs and parmesn cheese. Dip chicken in egg, then coat with bread crumb mixture.

    In 12 inch skillet, heat remaining oil over medium heat. Cook chicken i n oil for 10 to 15 minutes, turning once until no longer pink.

    Por tomato sauce around chicken in skillet. Sprinkle mozzerella cheese over chicken. Cover and heat until melted.
