Chicken: rub chicken with salt, place in boiling water with spring onion stalk, onion, carrot and ginger.

Boil chicken for 30min or until cooked. Once cooked, rinse with cold water.

Garlic topping: chop garlic, fry with a little oil until golden. In a small bowl, combine sesame oil, soy sauce and the fried garlic

Garlic chilli: boil chillies ans garlic until soft. Using pestle and mortar, grind both add salt and sugar to season

To serve: cut chicken to size, garnish with sliced spring onion, garlic topping, add little bit of the chicken stock. Serve with steamed rice or Hainanese rice with the chicken stock and chilli garlic.
