Bailie's Bucatini All'Amatriciana

One of my favorite pasta dishes ever. very simple, and easy authentic Italian. you can try this sauce with spaghetti if that's all you have, but I urge you to go get some bucatini. it's not hard to find, and you'll get the authentic All'Amatriciana experience. Enjoy!

Bailie's Bucatini All'Amatriciana

Cooking Instructions

"QB" means quanto basta or as much as you want.

The sauce will cook in about the same time it takes to cook the pasta.

while the pasta is cooking, heat up olive oil in a frying pan on high heat. Use your guanciale or pancetta and fri until it's crisp, 7 to 10 minutes.

add the garlic, onion and chili pepper flakes and sauté until the onions soften. turn down the heat to medium high, add the tomatoes with a little bit of salt and cook for an additional 5 minutes.

once your pasta is al dente, reserve a cup of the cooking water, drain the pasta and add it to the sauce.

if you're using bucatini, you may not have to add any of the cooking water to the dish because of the hollow middle of the noodle traps enough water and will release it right into the sauce. but if you're using spaghetti, I recommend adding some of the liquid to help bind the sauce to the pasta.

let the whole thing cook for about a minute and then remove the pan from the heat. Add the grated pecorino cheese, mix it together and serve.

This is another classic pasta dish. It only uses a few ingredients. That's why I adore Italian cuisine. They use only a few great ingredients and allow them to work their magic. Take pizza for example, it is just dough, sauce and cheese. I think that also apply to pasta. I mean pasta is also just pasta, sauce and cheese.The main ingredient of this dish is guanciale; it is an old-aged-cured pork cheek. It has loads of wonderful fat, herbs and spices. I personally do not consume pork. So, I used turkey bacon, cooked it with some herbs and spices instead. If you are using guanciale, skip the steps for the turkey bacon.The tricky part is to cook the pasta just 1 min under al dente and finish it off with the sauce. Basically, you will be cooking the pasta and sauce at the same time. Please use pecorino romano. You can get away with parmigiano reggiano tho, but I do find that pecorino has that nutty saltiness taste which permeates the dish nicely. Bucatini is traditionally used. This pasta is eaten a lot in the Lazio region of Italy, where Rome is located. The tomato sauce with cheese mixes well with pasta. It's easy but it's not that well known, so I've uploaded the recipe.In Italy we use a type of long pasta with a hole in it called bucatini, but since it's hard to find in Japan, I use thick spaghetti (with a cooking time of about 10 minutes) instead.
