Boil chicken breasts until cooked throughout, then shred all of the meat.

Pre-heat oven to 400°F

Place Tortilla strips onto a baking sheet and bake until crispy.

In a large pot, heat oil. Add onions, garlic and dreaming peppers. Cook for 4 minutes.

Stir in tomato, chicken, chicken stock and bay leaf.

add water if needed to cover

Simmer for 15 minutes

Stir in lime juice and cilantro.

Season with salt and pepper

Remove bay leaf

Serve topped with Tortilla strips, chopped cilantro and shreaded Monterey jack cheese.
