Makai Ke Atte Ki Mathri(My Innovative Dish)

Mathris are North Indian spiced salty crackers laced with ajwain and peppercorns. The trick to get perfect not too hard and not too soft melt in the mouth crispy mathris lies in the ingredients that goes into preparation of the dough and how its deep fried. Make it a circular or triangular shape as per ypur cooking skills , preference and enjoy with ypur simple assortment of sweet sour or hot chutneys.

Grind black pepper corns coarsely.

In a bowl, add makai ka atta, salt, soda, grindef black pepper corns, seaseme seeds,ajwain and oil

Mix well with the tip of your fingers.

Knead a soft dough with luke warm water.

Cover and keep it aside for 10-15mins.

Heat the oil.

Make small balls of the dough.

Press each ball between your palms to give round shape.

Repeat the process.

Drop 5-6 mathris at a time in the hot oil to fry.

Fry on medium flame., till golden brown and crispy.

It will take 15-20mins to fry.

Keep it aside to cool.

Store it in a air tight jar.
