preheat oven to 325

in a medium bowl, cream together the butter, white sugar, and confectioners sugar until light and fluffy

mix in lavender, mint, and lemon zest.

combine the flour, cornstarch, and salt and then mix into batter until well blended

divide the dough into 2 balls

wrap dough in plastic and flatten to about 1 inch thick

refrigerate until firm, about 1 hour

on a lightly floured surface, roll the dough out to about 1/4 inch thickness

cut into shape with cookie cutters or stamps and place on cookie sheets

bake for 18-20 min just until cookies begin to brown on the edges

cool for a few min on baking sheets then transfer to wire racks to cool completely
