put milk in large pot. double boiler works best.

heat milk until reaches slow boil. takes about 15 minutes

remove from heat and slowly stir in the vinegar. it doesn't make a vinegar taste, just helps with separation.

the curds will separate from the whey. slowly stir for a few minutes.

put a strainer in a pot and line the Stainer with a cheese cloth, drain bag or even an old clean tshirt.

pour the curds and whey thru strainer. pull the cloth up and give a twist to get out some of the whey.

massage in salt and any other spices or herbs you want to use. then tighten cloth to get out as much liquid as you can

place bundle in strainer and add weights on to to press cheese for roughly 3 to 4 hours.

remove from cloth and enjoy!
