These are a simple but yummy and filling breakfast for busy mornings. They would also make a great snack or a healthy dessert. They are soft and chewy, more reminiscent of bread than a cookie. You could always substitute the nuts for dark chocolate chips, if you're feeling indulgent.

Ingredients

  • 2large spotty bananas, mashed
  • 1 1/4 cupquick cooking oats
  • 1/4 cupold fashioned rolled oats
  • 1/2 tsp.ground cinnamon
  • 1/2 cupcoarsely chopped walnuts or pecans

Steps

    Preheat the oven to 350°F. Line a large baking tray with parchment paper or a silicone baking mat and set it aside. In a large bowl, mix all of the ingredients together until well combined.

    Scoop them onto the prepared baking tray, then flatten and shape them into cookies (these won't spread in the oven, so you can place them fairly close together). Bake for 12-14 minutes, until they begin to turn golden brown and are set.

  3. 3

    Let them cool completely on a wire rack. To store, keep them in an airtight container for 3-4 days.

I love to bake and to try out new recipes! I'm always on the lookout for simple dinners for busy weeknights. A lot of the recipes I post on here are ones I've found on Pinterest or from different bloggers, and that I've tried and really enjoyed, but I always reference to where I got the recipe from in the recipe description and the pictures are my own. If there's no source listed, then it's a rare recipe that I came up with. I have two wonderful kids and I hope to pass on my love of cooking and baking to them.
