Shrimp saltimbocca

My posts are usually of recipes that I had put some sort of spin on. This recipe... I didn't do a thing to it. I just wanted to share it because it is sooo friggin good. It's an appetizer that will definitely get attention.

This recipe serves 2 people at 2 pieces each. So just use your math skills to make more.

Oh... Please excuse the paper plate. I am done with doing dishes tonight.

Enjoy!

Steps

15 minutes
  1. 1

    Preheat oven to 350°.

  2. 2

In a small saucepan, combine brown sugar and Marsala over medium high heat and bring to a boil. Then reduce to what I call an aggressive (or hard) simmer. Stir regularly until it has reduced to half. Then remove from heat to allow it to cool for a few minutes. It will thicken slightly.

  3. 3

Meanwhile, heat oil in another small saucepan at medium high heat.

  4. 4

While everything is heating up, prepare the mozzarella, prosciutto and sage.

  5. 5

Fry shrimp until golden brown. Then drain on a paper towel.

  6. 6

On a shallow pan, layer the ingredients onto each shrimp and drizzle the glaze right over each piece.

  7. 7

Bake for 5 to 7 minutes so that everything has heated through.

  8. 8

Remove and serve. Careful... It will be hot.

My parents owned a bar and restaurant during my childhood. My father was the head chef and had such a tremendously diverse style in his culinary craft. It was only a matter of time before I would turn it into my own passion.Nowadays, my interest has been taking popular recipes from the web or restaurants (ie Food Network, Food.com, All Recipes, etc.) and creating them, but with my own little twist to them. Some changes are more extreme than others, but that's what makes it so interesting. Right?Anyways... sit back and relax. I have a number of awesome recipes that will blow your mind. Enjoy!
