Sear steaks on hot cast iron skillet 6-8 mins each side. Set aside to rest.

Add oil to skillet. Add onions with salt and pepper for 15 mins

Slice steak thin, trim fat. Place back on skillet in sandwich portions. Cover with cheese, then onions, then sub roll. Once cheese is melted flip over to form sandwich. Add Giordano to taste.
