
Beyin Salatasi (Lamb Brain Salad)

Soak the brains in cold, Salted water for 20 mins. Remove the membranes that cover them. Drain the excess water from the pot.

Place the brains in cold water and add vinegar and Salt. Boil for six minutes starting when the bubbles form on the bottom of the pot.

After the six minutes of boiling allow the brains to cool in the pot, after they have cooled place them either whole or chopped on a serving platter.

Add olive oil, lemon juice, parsley, and olives.
