preheat oven to 220°c.

add chicken, leeks, carrots, celery and thyme to a pot and slowly cook for 15 minutes.

turn up the heat and add flour and stir for a couple of minutes, then add wine and water in equal amounts, and the milk.

season with salt and pepper and stir, let simmer under a lid for 30-40 min. stir occasionally.

pour mixture into a casserole and cover with pastry, egg-wash the pastry and bake for 30-40 minutes in the middle of the oven.
