A new Mexican twist to my go-to hash brown breakfast casserole. Had some leftover taco meat so I concocted a Mexican cheese sauce to go with this (see recipe in my list). Turned out great! Top with avocado slices.

While not exactly a Monte Cristo, this is great way to use leftover Thanksgiving turkey. It's got a creamy and sweet flavor that compliments the savory turkey. If you can't find Delice cheese you can replace it with goat cheese. It's got a similar tang. If you don't like the flavor of Delice, try Brie instead for the creaminess but with a less potent taste.

Recipe is written for 2-4 servings. Ingredients listed for 4 servings. To reduce recipe for 2 servings, halve the ingredients that have a quantity of more than 1item (measurements of 1 cup, 1 TBSP, etc... should be halved as well).

Fresh ground beef salad on home made tostada shells, easy and quick. Inexpensive and Oversized, for a filling luncheon. Doesnt fit on one large tostada, so I use three small ones and fry extra ones for chips.
