Turkish Wild boar spare ribs in Cider and Honey marinade

This is for ex pats living in Turkey. First catch your wild boar. (Turks hunt but rarely eatt so you can acquire around 20 KGS of prime cuts for about £30. The ribs are about 14 inches long)

Marinate the ribs in the cider,honey and brown sugar overnight
- 3
Transfer the ribs and marinade to a large baking tin
- 4
Scrape the carrots and add whole to the marinade
- 5
Clean and slice beetroot and Quince and add to marinade
- 6
Season,cover and cook on low heat for 3 hours
- 7
A quince and beetroot sauce (similar in texture as apple sauce) can be made by removing these during the cooking
- 8
Serve with rice or vegatables
