mix all ingredients together

Heat about 3-5Tbsp oil on fry pan.

add potato mixture by heaping spoonfuls to hot oil, pressing out to form pancakes

Fry on each side until golden brown

Serve with syrup and applesauce

For variety you can add shredded root vegetables with potatoes. (such as parsnips, carrots, etc)

note: i usually do not measure very carefully...sometimes also add a few Tbsp of half and half to mixture. play with the recipe until you find what you like
