Mix flour, baking powder, baking soda and optional dry ingredients (if desired) together.

Beat egg and milk and any optional wet ingredients until smooth.

Gradually pour the dry mix into the wet mix until there are no lumps.

Pour 1/4 cup of the pancakes mix onto heated and oiled skillet, wait until bubbles form and pop at the top then turn once to finish cooking.
