pre-heat oven to 180*c

Set pastry packet aside to defrost

Mix together onion, sausage mince & tomato sause.

Add cheese small amounts at a time making sure you dont end up with cheese clumping together.

Separate pastry sheets one at a time, place a damp teatowel over remaining sheets to prevent them drying out

Cut pastry sheet in half, then in half again giving you four squares

Take a small handful of sausage mix an place in center of pastry square forming a rectangle, allow enough room to wrap. pastry around to form sausage roll use a small amount of water on finger along edge off pastry and pinch closed

Continue steps 5-7 until you have enough sausage rolls

Poke a couple of holes on top of sausage roll. I like to lightly glaze the tops of mine with a beaten egg but its not a necessity

Place them on a baking tray with baking paper allow about 1cm between each one an place in oven and bake for 30-40 minutes
