Ingredients

  • 1/2 stickbutter - melted
  • 1uncooked chicken breast ( or equivilant) finely chopped
  • 1 bunchgreen onions - cut short
  • 5ribs celery - thinly sliced
  • 2carrots - thinly sliced
  • 1 mediumsweet potato - small cubed
  • 1/2 tspgarlic powder
  • 1/2 tsponion powder
  • 6 cup2X strength chicken broth
  • 3 largemushrooms - thinly sliced
  • 2 largezucchini - thinly quartered
  • 1 bunchsnap peas - quartered
  • 6pieces okra - thinly sliced
  • 15 ozcan black-eyed peas - DRAIN & RINSE
  • 1 tspbasil
  • 1 tsporegano
  • 1/2 tspcumin
  • 1/4 tspblack pepper
  • 1/4 tsptabasco sauce
  • 15 ozcan diced tomatoes
  • 6 ozcheese-filled fresh tortollini

Steps

  1. 1

    SAUTE ingredients (butter thru onion powder) until celery clear.

  2. 2

    ADD ingredients (broth thru tabasco sauce).

  3. 3

    COOK 20 minutes until veggies tender

  4. 4

    ADD tomatoes & pasta.

  5. 5

    COOK until pasta tender.

  6. 6

    SPRINKLE with 1 tablespoon fresh parmesan cheese.

  7. 7

    SERVE HOT!!
