Ingredients

  1. 6eggs
  2. 1onion finely chopped
  3. 1/4tomato finely chopped
  4. 1chilly finely chopped
  5. 3 tbspbutter
  6. 3/4 tspcumin powder
  7. 3/4 tspcoriander powder
  8. 1/4 tspturmeric powder
  9. 3 tbspmilk
  10. 1salt to taste
  11. 1freshly ground pepper
  12. 6 sliceBread toasted and buttered
  13. 1coriander leaves finely chopped

Steps

  1. 1

    heat the butter in a pan over a low flame

  2. 2

    add the chopped onions to the butter and cook till they start to change colour

  3. 3

    While the onions cook, crack the eggs in a bowl and add the salt, pepper and milk to the eggs and beat lightly

  4. 4

    Once the onions are lightly fried, add the turmeric powder, coriander powder, cumin powder and tomatoes and fry for a further 2 to 3 minutes

  5. 5

    add the egg mixture to the pan and stir continuously (like when preparing scrambled eggs)

  6. 6

    Keep stirring till the eggs reach a creamy consistency

  7. 7

    For plating... Place 2 slices of the bread on the plate and heap the Akuri on them

  8. 8

    garnish with chopped coriander

  9. 9

    serve hot
