Akuri on Toast - a dish made famous by the Parsi community

heat the butter in a pan over a low flame

add the chopped onions to the butter and cook till they start to change colour

While the onions cook, crack the eggs in a bowl and add the salt, pepper and milk to the eggs and beat lightly

Once the onions are lightly fried, add the turmeric powder, coriander powder, cumin powder and tomatoes and fry for a further 2 to 3 minutes

add the egg mixture to the pan and stir continuously (like when preparing scrambled eggs)

Keep stirring till the eggs reach a creamy consistency

For plating... Place 2 slices of the bread on the plate and heap the Akuri on them

garnish with chopped coriander

serve hot
