Steps

cut potatoes into pieces bigger than bite size (they will cook down smaller) then boil potatoes in chicken stock til almost cooked

cut up onion and celery into bite size pieces

cook bacon in pan then set aside
- 4
saute celery and onion in bacon grease for flavor
- 5
add in half and half, celery and onion and bring to boil stirring frequently then simmer
- 6
add bacon to soup and powdered mashed potatoes to thicken soup
- 7
add shredded cheese to individual servings as desired
