Ingredients

4 servings
  1. 4 ozfilets of beef
  2. 1/4 tspsalt
  3. 1 clovegarlic, minced
  4. 8 sliceprosciutto ham
  5. 4 slicemozzarella
  6. 1 tspparsley
  7. 1 tbspgrated romano
  8. 3 eacheggs well beaten
  9. 1/4 cupmilk
  10. 3/4 cupbread crumbs
  11. 3 tbspclarrified butter
  12. 2 tbspOlive oil
  13. 2 tbsplemon juice
  14. 1/4 cupwhite wine
  15. 1/4 cupchicken or beef broth

Steps

    Preheat oven to 375

  2. 2

    Horizontally slice each filet butterfly style, leaving one edge in tact so filet is not completely cut through. Season with salt, pepper, & garlic

  3. 3

    In center of each filet place 2 slices of prosciutto, one slice mozzarella.

  4. 4

    Close halves like a sandwich and press mear to seal edges.

  5. 5

    Beat parsley and grated cheese into eggs.

  6. 6

    Dip meat into milk, bread crumbs, and finally eggs.

  7. 7

    Heat butter and oil in saute psn until bubbling. Add filets and cook ovrr low heat until browned on both sides.

  8. 8

    Drain cooking fat. Add lemon juice, wine, and broth to skillet and place in oven for approx 10 minutes (less for rare, more time for well-done)

  9. 9

    Pour a little pan juice over each filet, garnish and serve.
