Preheat oven to 375

Horizontally slice each filet butterfly style, leaving one edge in tact so filet is not completely cut through. Season with salt, pepper, & garlic

In center of each filet place 2 slices of prosciutto, one slice mozzarella.

Close halves like a sandwich and press mear to seal edges.

Beat parsley and grated cheese into eggs.

Dip meat into milk, bread crumbs, and finally eggs.

Heat butter and oil in saute psn until bubbling. Add filets and cook ovrr low heat until browned on both sides.

Drain cooking fat. Add lemon juice, wine, and broth to skillet and place in oven for approx 10 minutes (less for rare, more time for well-done)

Pour a little pan juice over each filet, garnish and serve.
