  1. 100 gramsdairy free butter
  2. 100 gramscaster sugar
  3. 3eggs
  4. 60 gramsbrown rice flour
  5. 40 gramspotato flour
  6. 2heaped tsp baking powder
  7. 1 tspzanthan gum
  8. 1 tspvanilla essence

Steps

  1. 1

    preheat oven to 180°F

  2. 2

    cream together butter and sugar

  3. 3

    whisk eggs separately and then slowly beat into the batter.

  4. 4

    beat in the baking powder

  5. 5

    beat in the two flours

  6. 6

    beat in the vanilla essence

  7. 7

    beat in the zanthan gum

  8. 8

    place your cupcake cases into a cake tray and fill them halfway with the cake mix, be sure to smooth out the tops.

  9. 9

    bake for 15 - 20 minutes, til well risen and golden.
