Prepare pineapple by taking out the core and taking off outer rough skin. Cut into about 8 pineapple spears.

On the stove top combine coconut milk and brown sugar until smooth. Pour into large container and put pineapple in. Let the pineapple soak for 30 minutes.

If you want you want you can put skewers in or grill them just plain, but now they are ready to grill. Grill until you are satisfied with the marks on the pineapple.
